We like legumes and cereals. In the past dates we played with rice. This time it is the turn of another ancient cereal: corn, widely used in the kitchens of the whole world. We wish to present it to you in the most traditional form for Italy, and also in a slightly more original guise: polenta, classic with sausage sauce (and/or with cheese in the vegetarian version); and an Iberian-scented salad.
All this coupled with one of the Piedmontese wines we love the most: Cappellano‘s Nebbiolo 2012. The Cappellano farm has well-founded beginnings in the history of wine, ever since the great-great-grandfather, through the generations, up to Augusto, who takes care today of the wineyard and the cave just as he was taught by his grandfather and father. Traditionalists but not conservative, as they love to define themselves, as they do things the old way but with the help of the most advanced equipment: organic in the wineyard, interference-less in the cave.
